Each October, in Japan's Wakayama and Gifu prefectures, persimmon farmers begin the most critical step in Kivori's supply chain: selective hand-picking. Only persimmons harvested at peak tannin concentration — 90-110 days after first bloom — contain the kakishibu compounds that bind to 2-nonenal.
Unripe fruit doesn't have enough tannin. Overripe fruit has oxidized. The window is narrow — often just 10-14 days per season. Every batch is tested for tannin density before processing begins. Batches that don't meet specification are rejected, regardless of harvest volume.
